      salt + vinegar roasted potato slices Salt and Vinegar Broiled Fingerling Potatoes Adapted from Martha Stewart Living, June, 2009 -serves 4- Ingredients 1 pound fingerling potatoes, sliced lengthwise to 1/4-inch thickness* 2 cups white vinegar Extra virgin olive oil Kosher Salt Pepper Method 1. In a small pot, combine the potato slices and vinegar. Bring to a boil, then lower the heat and simmer until fork-tender, about 8 minutes. Let cool in liquid for 30 minutes. Then drain well and pat potatoes dry with paper towels. 2. Preheat the broiler with a rack about 6 inches below the heat source. Dump the potato slices onto a sheet pan, sprinkle very generously with olive oil, salt and pepper, and toss to coat. Arrange the potato slices in a single layer. Broil until lightly browned on top, about 7 minutes. Then flip the slices and broil until the underside is lightly browned, about 5 minutes more. Serve warm.

    Roasted Salt and Vinegar Potatoes

    Sweet potato: Preheat oven to 350* Slice sweet potatoes ~1/2" thick Lightly coat with olive oil a sprinkling of salt Bake for 20min [turning once] Turn heat to 400* Bake for ~15-20min more [turning once]

    Low carb!...YUMMY!SIMPLE & EASY ... Just my style! Slice the zucchini in half. Slice off the bottom to keep it stable. Brush with olive oil and top with garlic or garlic powder, sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft. ENJOY!

    2 cucumbers- cut up, 1 pint cherry or grape tomatoes (about 30), 2 tablespoons chopped fresh basil, 1 cup fresh mozzarella (I like to use the little balls), 1 avocado, 1 tablespoon extra virgin olive oil, 2 tablespoons balsamic vinegar, 1 teaspoon garlic powder, Salt and pepper to taste

    Heat oven to 375. Wash and slice zucchini. Drizzle with a little olive oil. Then place zucchini slices on a cookie sheet in a single layer. Sprinkle with salt, pepper, parmesan cheese, and garlic powder. Roast uncovered in oven for 10-15 minutes or until tender.

    TRIED IT AND LIKED IT! Parmesan Crusted Yellow Summer Squash Recipe... I will definitely use it again, but next time I think it needs some salt & pepper or seasoning of some kind to round it out. :)
