Lemon Zucchini Loaf with Lemon Glaze-this was very good. Want to try a sugar substitute next time. It was fun to have the zucchini and lemony tastes together. I changed the glaze only a little, adding a few TBL of melted butter. It is our fav lemon glaze since forever.

Lemon Zucchini Loaf. Made these into mini muffins, used half quinoa flour, only 1/3c sugar, used nf plain yogurt for half the oil, 1.5-2c zucchini, and added chopped cashews. I liked them and would add more lemon zest, but normal people would probably need the full 2/3c sugar...
