Sweet potato creation of mine: Wash, peel, and dice 2 medium sweet potatoes. Put the chunks in an 8x8 pyrex baking dish, coat with olive oil, honey, brown sugar, and any other spices you like ;) Cook for 25 minutes at 475 or until soft (I rotated about every 6 minutes to keep coated). Mash and spoon into wonton wrappers placed in a cupcake pan. Lower the oven to 300 and crisp the wontons with sweet potato in the center for 6-7 minutes. Easy, vegetarian, and limitless experimenting…

Cut up several potato's then put them in a bowl with ice and ice water 10 minutes(this will help them come out crispy when baked!) next lay them out on parchment paper spray well with Pam Olive oil non stick cooking spray, then season as desired -salt substitute, black pepper or garlic salt thyme etc and bake 425 for 25 minutes, flip them and cook 10-15 minutes more and done.
