Thanks Aarti for this idea for storing cilantro! Discard stems/leaves that are going bad, snap off tough stems, wash then spin herbs as dry as possible. If you have time and counterspace, lay them out to dry on a kitchen towel (wet herbs go bad faster). This batch was just spun and boxed. Line a plastic container with paper towels, place the cilantro in one even layer, cover with another layer, and snap the box shut. These were packed 3 weeks before the picture was taken!
