3 cups chopped seedless watermelon 1 to 1½ cups chopped cherry tomatoes ½ cup chopped red onion 2 tbsp chopped basil 2½ tbsp olive oil 2 Tbs balsamic vinegar salt and pepper to taste reduced fat feta to garnish
Fresh Watermelon LemonadeDirections: Blend watermelon chunks in a blender until it becomes nice and smooth. No need to add anything else to the blender, just put the watermelon in there and blend away. (Also, so need to take the white seeds out, those will blend right up.) Combine 1/2 cup lemonade with 1/2 cup watermelon juice. Serve over ice.
