I've made this cake twice now and people just love it! It doesn't contain flour (gluten free) and literally taste like Lemon Meringue pie in a cake! I served it with coconut whip cream and fresh blueberries! YUM! Great for my niece Jasmine!

not what this picture is about, but gave me the idea.. freeze lemon juice into skinny icecubes that can easily be dropped into waterbottles to get that healthy dose everyday! no need to slice up a whole lemon everyday and not use all that fresh juice right away
