    Fresh fig, some type of blue cheese (probably Gorgonzola), and looks like sprinkles of fresh thyme, on Stilton flatbread (or wheat lavash). One recipe says to add jam. Probably delicious with a glass of Syrah or Pinot Noir.

    Fig Flatbread Fresh Fig and Stilton Flatbreads – makes 2 •1 piece regular or whole wheat premade flatbreads, pizza crust or puff pastry (baked per the instructions). •4 tbsp. fig preserves •10-12 fresh Mission or Brown Turkey figs – thinly sliced •4 ounces good quality, crumbled goat cheese, blue cheese or Gorgonzola here •4 sprigs fresh thyme, leaves removed from tough stems - Preheat oven to 350. Place the two pieces of bread on a baking sheet and bake until it begins to barely crisp – 2 to 3 minutes. Remove from oven and allow to cool to the touch. Spread 2 tbsp. of jam on each piece of bread. Even distribute the sliced figs over the bread. Top each with 2 ounces of crumbled cheese and evenly sprinkle on the thyme leaves. Bake until crispy and the cheese has melted – this took 5 to 6 minutes in my oven. Cut into rough pieces and serve while still warm.

A stumbled upon a restaurant in Antigua, Guatemala...this quickly became one of my favorite desserts-baked figs with blue cheese and honey.

I love figs. We used to have several trees in VA and loved eating them and making fig bread. Oh, yummy! We haven't been able to find fresh ones since we moved to FL 35 years ago. I miss fresh figs. :(
