Ladyfingers 4 eggs, separated 2/3 c sugar 7/8 c flour 1/2 tsp baking powder Preheat to 400, cover cookie sheet with parchment. beat egg whites on high until soft peaks form. Slowly add 2 tbls sugar and beat until stiff and glossy In another bowl beat yolks and rest of sugar. Whip til thick and pale in color. To make Chocolate Lady Fingers, substitute 3/4 cup all-purpose flour plus 2 tablespoons cocoa powder for the all-purpose flour.
