Instead of preparing chicken per the recipe, I cooked it in a slow cooker, covered with water, for about 5 hours. It then shred easily with just a touch of a fork. I assembled it on a Sunday, covered it and place in the fridge until a Thursday when I popped it in the oven. Great for an easy weeknight meal! Serve with sour cream, salsa, and sliced avocado.

Cut refrigerated biscuits into fourths and stir into meat mixture. Dump into a greased 9X13 casserole pan and bake for 25 minutes. Take out of oven and sprinkle cheese on top. Bake for an additional 10 minutes. Let stand for 5 minutes. Enjoy!
