Baked Chicken Fajitas - I used: 3 chicken breasts, 2 whole colored peppers, 1 sweet onion, salsa instead of diced tomatoes and mrs. Dash fiesta lime seasoning. Double the spice mixture next time. Good though!

Slice tomatoes crosswise & season with salt & pepper. Saute crushed garlic, olive oil & fresh thyme until golden. Add some parmesan cheese and remove from heat. Place tomato halves cut side down on an oiled grill until you get grill marks, then turn them over with tongs & spoon the garlic cheese topping & cook until it looks done.
