Margarita Cupcakes: baked 7/16/2011. Fresh lime juice and zest gives great flavor!! Frosting is 8 egg whites with sugar, heated in double boiler then beat for 8 minutes - can be a bit tricky - but WELL worth it! Very light and refreshing frosting. Use a high end white tequila and fresh lime juice for best results.
Margarita Cupcakes Yield: about 24 cupcakes Ingredients: For the cupcakes: 3 cups all-purpose flour 1 tbsp. baking powder ½ tsp. salt 1 cup (2 sticks) unsalted butter, at room temperature 2 cups sugar 4 large eggs, at room temperature 3 limes, zested and juiced ½ tsp. vanilla extract 1 cup buttermilk
margarita cupcakes. these are absolutely delicious (my recommendation: for non-alcoholic cupcakes, substitute everything tequila, lime zest, lime juice for 1/2 vanilla 1/2 orange extract, orange zest and orange juice... dreamsicle cupcakes!)
Rolo Cupcakes. I started with my favorite doctored up cake mix recipe, nestled a frozen Rolo in the middle of the batter, topped the baked cupcakes with caramel infused buttercream and finished with a drizzle of ganache and a Rolo. Are you drooling yet?
