One of my favorites! Coctel De Camarones (Mexican shrimp cocktail) - 1 -2 lb shelled and cooked shrimp (50-60 count), 2 -3 large tomatoes , chopped ½ small white onions, chopped or 2 green onions, ½ cup cilantro , slightly chopped ½ jalapeno , diced, with seeds, 1 avocado , chopped, tomato juice (V8), lime juice, salt and pepper Mix all in glass bowl and chill, serve with crackers.
Made these for dinner tonight. The kids said it was my best attempt at chile rellenos, yet!!!! Still not better than my mother in laws. But, that's an A+ for me. Definitely worth the 2 hours, (as my son said) they were bomb!!!
