Potato soup - We enjoyed this; however, next time I'm going to omit the carrots (they were weird in a potato soup) and add chopped fried bacon on top with shredded cheese. Also, when I made it, I doubled the recipe (was enough for 4 people that way) and added 1T seasoned salt and mixed in 1/2c cheddar cheese.

    Sounds delicious. Do you really use 2 full cups of olive oil??? Sounds like a lot. Also, are yams just as acceptable as sweet potatoes?? Has anyone tried it with all or part coconut oil ? Thanks for sharing.
