Maple Peach Pork Chops - I used a little bit of oil instead of butter. Heat on med-high until oil or butter is hot. Layer sweet potatoes (sliced about .25" thick) on the bottom, half onion (sliced thin), peaches (or nectarines), pork chops, 1/2 cup maple syrup. Baked at 425 for 1 hour. Thinner chops bake for 45 min and test with therm. SOOOOO delicious!
Fish in Caper Lemon Sauce: The sauce has the perfect blend of saltiness and tangy taste, which is perfect for the mild-bland tilapia. The best part of this dish is that you can omit anything (if you don’t like capers or anchovies, you can leave them out) and still get a delicious dish. You can also add cream, sour cream or yogurt.
