Black beans and pinto beans are flavored with Pace® Picante Sauce and seasonings to make separate and delicious bean mixtures, which are then layered with flour tortillas and Cheddar cheese, and baked until hot, cut into wedges and served.
Mexican Bean Salad -This bean salad is perfect for any celebration, but it bursts of flavor make it ideal for Cinco de Mayo. Aside from classic Mexican ingredients, this bean salad takes a twist using white beans instead of black, Greek yogurt instead of sour cream and almonds instead of pepitas. This salad can be served as a light, vegetarian main meal or as a side dish for lunch and it’s perfect for the warm weather that’s headed our way!
Teriyaki Chicken Casserole did not do fried rice, but rather 2 cups of brown rice. I also threw in some cabbage and some celery that I happened to have in my fridge. So I mixed up the teriyaki sauce in the saucepot and poured it over all the other ingredients (including raw chicken and uncooked brown rice and still frozen veggies). It cooked in 7 hours on low and is so yummy.
