16 1 to 1 1/4 pounds dry sea scallops, dry

Baking & Spices

1 Black pepper, Freshly ground
1 Kosher salt

Oils & Vinegars

2 tsp Olive oil

    Pan Seared Scallops 4-5 sea scallops per person Olive oil Salt and pepper Lightly oil one side of scallops, season with salt and pepper. Get a nonstick skillet medium hot, place oil side of scallops in skillet, let sear without turning about 2-3 minutes then turn a little. Serve with some steamed Jasmine rice and cool cucumber salad.

    Seared Scallops Recipe : Alton Brown : Food Network - Add unsalted butter and olive oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center.
