    • 7 sprigs Marjoram, fresh
    • 1 Onion
    • 1 lb Potatoes, new
    • 4 sprigs Thyme, fresh leaves

    Baking & Spices

    • 1 1/2 tbsp Allspice, whole
    • 1 cup Brown sugar
    • 1 cup Kosher salt
    • 2 Kosher salt and freshly ground black pepper
    • 1 1/2 tbsp Mustard seeds, whole
    • 1 1/2 tbsp Peppercorns, whole black

    Oils & Vinegars

    • 5 tbsp Olive oil, extra-virgin

    • 2 tbsp Butter, unsalted
    • 1/2 lb Butter, unsalted

    • 1 pound baby carrots, trimmed and scrubbed
    • 1 pound baby parsnips, trimmed and scrubbed
