1 (2 1/2 to 3 pound) brisket

4 Bay leaf
1 Cabbage, small
6 Carrots
1 head Celery including, leaves
1 1/2 tbsp Coriander, whole
1 head Garlic
1 Herbed root vegetables
1/2 cup Herbs like thyme, mixed fresh
7 sprigs Marjoram, fresh
1 Onion
1 lb Potatoes, new
4 sprigs Thyme, fresh leaves

Baking & Spices

1 1/2 tbsp Allspice, whole
1 cup Brown sugar
1 cup Kosher salt
2 Kosher salt and freshly ground black pepper
1 1/2 tbsp Mustard seeds, whole
1 1/2 tbsp Peppercorns, whole black

Oils & Vinegars

5 tbsp Olive oil, extra-virgin

Dairy

2 tbsp Butter, unsalted
1/2 lb Butter, unsalted

Other

1 pound baby carrots, trimmed and scrubbed
1 pound baby parsnips, trimmed and scrubbed
1 pound baby turnips, trimmed and scrubbed
