Beef Potpies With Cheddar-Stout Crust

3 hrs to make • Serves 6


2 1/4 lbs Beef chuck, roast


1 lb Carrots
2 stalks Celery
3 Leeks, medium


1 Egg, large

Baking & Spices

2 cups Flour
1 Kosher salt and freshly ground pepper
3/4 tsp Salt, fine


1 stick Butter, unsalted
3 tbsp Butter, unsalted
3/4 cup Irish cheddar cheese, grated

Beer, Wine & Liquor

11 1/3 tbsp Stout beer
