Roasted Cauliflower Steaks with Raisin Relish

Vegan • Gluten free • Paleo • 35 mins to make • Serves 4

Produce

1 small head Cauliflower
2 tbsp Golden raisins
1 tbsp Parsley, fresh

Condiments

2 tsp Capers

Baking & Spices

1 Kosher salt and freshly ground black pepper
1/4 cup Red peppers, roasted

1 tbsp Cider vinegar
2 tbsp Olive oil, extra-virgin

    Roasted Cauliflower Steaks: Trim the base of the cauliflower, and then cut the head into 1-inch-thick slices. Sprinkle 1/4 teaspoon each salt and pepper over both sides of each cauliflower slice. Heat 2tbps olive oil in a large nonstick ovenproof skillet over medium-high heat. Add the cauliflower steaks and florets and cook, turning the steaks once, until browned on both sides, about 5 minutes. Transfer the skillet to the 400 oven. Roast 15 to 20 minutes.
