sauteing 1 pound boneless, skinless chicken breasts coarse salt and fresh black pepper 1 large onion, diced 4 cloves garlic, minced 1 tablespoon tomato paste 1 chipotle pepper in adobo, minced (or 2 or 3 if you like it real spicy!)

Chicken Tortilla Soup. It’s thick and cheesy with bits of chicken, spicy and pretty much tastes like the best taco ever.

Pioneer Woman's Chicken Tortilla Soup- This is better than any restaurant!

The Pioneer Womans Chicken Tortilla Soup----Very flavorful. Make sure to start the soup a couple hours before serving. Its not a labor intensive soup, but it does require that you go back every thirty minutes or so and add something, lower the heat, or give it a stir.
