Pioneer Woman's Chicken Tortilla Soup. -- Roasted two chicken breasts with skin on in oven; -- Used homemade chicken broth; -- Added onion powder, Lawry's and fresh lime juice to soup; -- Did not add corn tortillas to soup, fried my own and added as a garnish, along with cilantro, Mexican blend cheese and sour cream. --This soup is AWESOME.

sauteing 1 pound boneless, skinless chicken breasts coarse salt and fresh black pepper 1 large onion, diced 4 cloves garlic, minced 1 tablespoon tomato paste 1 chipotle pepper in adobo, minced (or 2 or 3 if you like it real spicy!)
The Pioneer Womans Chicken Tortilla Soup----Very flavorful. Make sure to start the soup a couple hours before serving. Its not a labor intensive soup, but it does require that you go back every thirty minutes or so and add something, lower the heat, or give it a stir.
