    Method for baking chicken breasts: "Preheat the oven to 375 degrees F. Start by mixing together the cumin, 1 teaspoon of the chilli powder, the garlic powder and salt. Drizzle the chicken breasts with 1 tablespoon of the olive oil. Then sprinkle with 1 teaspoon of the spice mixture. Set the rest of the spice mixture aside. sauteing 1 pound boneless, skinless chicken breasts coarse salt and fresh black pepper 1 large onion, diced 4 cloves garlic, minced 1 tablespoon tomato paste 1 chipotle pepper in adobo, minced (or 2 or 3 if you like it real spicy!)

The Pioneer Womans Chicken Tortilla Soup----Very flavorful. Make sure to start the soup a couple hours before serving. Its not a labor intensive soup, but it does require that you go back every thirty minutes or so and add something, lower the heat, or give it a stir.
