Mexican Lasagna

30 mins to make • Serves 4


2 lbs Ground chicken breast


1 (15-ounce) can Black beans
1 cup Corn, frozen kernels
1 cup Heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes, medium
1/2 Red onion
2 Scallions

Baking & Spices

2 tbsp Chili powder
1 Salt

Oils & Vinegars

3 tbsp Olive oil, extra-virgin

Nuts & Seeds

2 tsp Cumin, ground

Bread & Baked Goods

8 (8 inch) spinach flour tortillas


2 1/2 cups Cheddar or shredded pepper jack

Spaghetti Aglio, Olio, e Peperoncino. Simple, easy, and cheap!!! I didn't use near as much red pepper flakes as it called for, and I sauteed the garlic and pepper flakes first. Next time I might try the suggestion for adding asparagus and shrimp.

Bubble Up Lasagna | Plain Chicken - this was good and SO easy! Just a little too salty ... maybe will make the marinara next time or look for a lower sodium one (used Trader Joe's Tomato Basil).
