1 (15-ounce) can Black beans
1 cup Corn, frozen kernels
1 cup Heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes, medium
1/2 Red onion
2 Scallions

Baking & Spices

2 tbsp Chili powder
1 Salt

Oils & Vinegars

3 tbsp Olive oil, extra-virgin

Nuts & Seeds

2 tsp Cumin, ground

Bread & Baked Goods

8 (8 inch) spinach flour tortillas


2 1/2 cups Cheddar or shredded pepper jack
