Zucchini Parmesan Crisps 1/2 cup vegetable oil 1 cup Panko* 1/2 cup grated Parmesan cheese 2 zucchinis, thinly sliced to 1/4-inch thick rounds 1/2 cup all-purpose flour 2 large eggs, beaten

Oven at 300*, cook for 30-40min. Toss thickly sliced zucchini in olive oil. In another bowl, combine parmesan cheese, bread crumbs, and a few turns of pepper. Coat zucchini, bake until browned & crisp. Serve hot! For salt and vinegar, soak slices in vinegar for 1hr and sprinkle with salt. Chipotle powder or curry powder for other flavors.
