1/4 cup Cilantro, fresh
2 Jalapenos
1 Lime, Juice of
1 tsp Mexican oregano, dried
1/2 head Napa or white cabbage
3 Plum tomatoes, large
1 Red onion, small


1 tbsp Capers
1 cup Manzanilla olives, pitted and halved
1 Vera cruz salsa

Baking & Spices

2 tbsp Ancho chile powder
3 Kosher salt and freshly ground black pepper

Oils & Vinegars

1 Canola oil
2 tbsp Olive oil
3 tbsp Red wine vinegar
1/4 cup Spanish olive oil, extra-virgin

Bread & Baked Goods

8 White or yellow corn tortillas


1/2 cup Barely chopped fresh cilantro
