      A twist on traditional pesto - Sundried Tomato Pesto. I added some red pepper flakes to kick it up a bit.

      310 cals per serve. Creamy roasted tomato pasta. Serves 2. 100g penne 1 large tomato 2 cloves garlic Basil, oregano, salt and pepper to taste. 40g light cream cheese 50g low fat sun dried tomatoes ( optional - I love a strong tomato flavour) While cooking pasta, chop tomato, roast with the garlic at 200 degrees. Then add to fry pan, add cooked pasta, cream cheese, basil, oregano, salt and pepper to taste. Stir until cream cheese has melted through, top w/ Parmesan if you don't mind extra cals!
