Black Bean, Corn and Tomato Salad

Produce

1 Bay leaf, dried
2 (15-ounce) cans Black beans
1/4 cup Cilantro, fresh leaves
4 ears Corn
6 oz Jicama
2 tbsp Lemon, zest
2 tbsp Lime, zest
1 Onion
2 Tomatoes

Canned Goods

3/4 cup Chicken broth

Condiments

3 tbsp Agave nectar or 2 tablespoons maple syrup
2 tbsp Lemon juice
2 tbsp Lime juice

Baking & Spices

1/2 tsp Cayenne pepper
1 tbsp Kosher salt
1 Kosher salt and freshly ground black pepper
2 1/2 tsp Paprika, smoked

Oils & Vinegars

3 tbsp Olive oil
1/4 cup Olive oil, extra-virgin
