Weight Watcher CROCKPOT PINTO BEAN SOUP: Simmer 2 cups Dry Pinto Beans 10 minutes, Cover stand 1 hour. Drain Add to Crock Pot w/28 oz Chicken Broth, 1/2 cup Water, 1 Lg Onion, 3 Cloves Garlic, 1 tsp Cumin, 1/8-1/4 tsp Cayenne. Cook on Low 8 hours or High 4 hours. Add 1 can diced Tomatoes 30 minutes more. Can use potato masher if desired to change texture. Top w/Cheese. Yum :-)
