Sweet Chilli and Soy Baked Chicken. Opinion: the chicken falls apart you in your mouth, only needed 30 mins in the oven. Had to add extra sugar to the sauce because it wouldn't thicken and I would forgo the coconut rice because coconut milk makes it gluggy and the flavor of the sauce would be better complimented with plain rice.
