1 2 pound smoked sausage, cut into 1/4-inch slices, smoked


2 Bay leaves
2 (12-ounce) cans Beans, red
2 Celery, ribs
2 cloves Garlic
1 Green bell pepper
1 Onion, medium
1 tsp Thyme, dried

Canned Goods

7 cups Chicken broth

Pasta & Grains

2 cups Rice, long-grain

Baking & Spices

1 tbsp Neelys dry rub
1 Pinch Salt
1 Salt and freshly ground black pepper

Oils & Vinegars

2 tbsp Vegetable oil

Red Beans and Rice from I soaked some red beans overnight and cooked them yesterday. So now looking for a good recipe for red beans. Not sure I'll add any pickled pork since I have none, but I'll add some extra garlic and sauteed onions and it'll be a healthy main course over rice. I'm turning Bob into a semi vegetarian, not that he's a willing candidate. But I'm the chief cook & I like to introduce non-processed natural foods loaded with vitamins and nutrients to our diet.

    Ok, well, I really only used part of this recipe from the Food Network. I already had soaked and cooked the beans. Then with the sauteed veggies, added a cup of salsa, a 1/2 cup spaghetti sauce and half of a small 4 oz can of some sort of spicy hot pepper in adobo sauce. Simmered for an hour or two. Boy was it good. We served it over rice and also Krusteaz Honey cornbread muffins. Healthy, filling and differently delicious.
