PW Green Beans & Tomatoes - 8 slices bacon cut into 1-inch pieces, 1 chopped onion, 2 lbs trimmed green beans, 3 14.5-oz cans whole tomatoes with juice, salt/black pepper, cayenne pepper. Cook bacon over medium until light golden (not crisp). Drain off excess fat, then add onions. Cook until bacon & onions are golden brown. Add green beans & tomatoes. Sprinkle in salt, pepper & cayenne to taste. Stir, then cover & reduce heat to low. Simmer 1 hr.
Skillet Cornbread from FoodNetwork.com This is a simple-but-good buttermilk cornbread recipe. I doubled the recipe so it could fill my cast iron skillet, and it turned out as the perfect accoutrement to my turkey chili. I would describe it as a cornier cornbread, but not a sweet one (there's no sugar). You brown it on the stove for a crust, then cook it in the oven. Yummy.
