Chicken Piccata Recipe : Giada De Laurentiis : Food Network -- HEALTH NUT VERSION: leave out ALL butter, replace flour with quinoa flakes and chicken stock with veggie stock. I made it tonight for dinner, and it was DELICIOUS. If you're not in love with lemon, you might want to cut that too without the butter, but we loved it. My husband asked for thirds.
Penne with Spinach Sauce NOTES: I added walnuts and an egg to the mixture in the blender to up the protein and creaminess of the sauce. I also left out the goat cheese, which I didn't have, and used 2 oz. cream cheese. The pasta was delicious but very garlicky. Next time I will use just one large clove of garlic.
