8 oz Applewood smoked bacon, dry cured center cut
2 1/2 lbs Chuck beef


1 lb Carrots
2 tsp Garlic
1 lb Mushrooms stems discarded, fresh
1 lb Onions, frozen whole
1/2 cup Parsley, fresh
1 tsp Thyme, fresh
2 Yellow onions

Canned Goods

1 can Beef broth
1 tbsp Tomato paste

Baking & Spices

3 tbsp All-purpose flour
1 Black pepper, Freshly ground
1 Country bread or sour dough
1 Kosher salt

Oils & Vinegars

1 tbsp Olive oil, good


4 tbsp Butter, unsalted

Beer, Wine & Liquor

1/2 cup Cognac
1 (750 ml.) bottle Red wine such as cote du rhone or pinot noir, good dry
