Chicken Parmesan In a large saute pan heat a 2-count of oil (about 2 tablespoons) over medium heat. When the oil is hot and hazy, add the onion, garlic, and bay leaves; cook and stir for 5 minutes until fragrant and soft. Hand tear half of the basil leaves. Add the olives and hand-torn basil. Carefully add the tomatoes; cook and stir about 15 minutes until the liquid is cooked down and the sauce is thick. Season with sugar, salt, and pepper. Lower the heat, cover, and keep warm.
Chicken Parmesan is hands down my favorite Italian meal; I've tried all sorts of breading variations, and surprisingly, we both really liked this quinoa version. The quinoa adds some bulk to the chicken, and has a little crispiness, too. Since quinoa offers so many additional health benefits compared to regular breadcrumbs, this might be one of our go-to healthy chicken parm recipes. Served with warm marinara, it's delicious.
