Now I know why my cookies turned out so chewy! Once, when I was baking cookies, I ran out of flour so made up the difference with bread flour. The cookies were perfect! I haven't had the same success since, but I think it must be that I've planned ahead since then and haven't melted my butter - it's been at room temp instead.

Blueberry Coconut Pecan Breakfast Cookies [recipe, gluten and sugar free] I played with this recipe a lot because it calls for 3(!!) mashed bananas, and I don't, erm *love* bananas. Still a great idea, but I've taken the bananas out, added applesauce, maple syrup, almond flour, and xylitol. Not this recipe, by a long shot, but a good inspiration!
