Vegan, Gluten-Free - Oven Roasted Asparagus and Mushrooms  Ingredients: -1 bunch of asparagus (we used two bunches so wed have leftovers!) -1/2 package white mushrooms -olive oil -salt, pepper, and garlic powder, to taste  Directions: 1. Wash and chop asparagus into one inch pieces. Slice mushrooms. 2. Add both vegetables to a baking dish. Lightly coat with olive oil, mixing to ensure that everything is evenly coated. 3. Sprinkle with a pinch or two of sea salt, and then generously season with freshly-cracked black pepper. Roast for 8-12 minutes, or until the tips begin to brown and the asparagus is tender. Remove and garnish with lemon zest.
