Tuscan Soup 1 lb ground Italian sausage 1 teaspoon paprika 1 large white onion, diced 4 cloves garlic, pureed 10 cups chicken broth 1 pound (about 3 large) Russet potatoes, sliced into disks 1 cup heavy cream 1/4 of a bunch (about 3-4 cups) kale, torn into bite sized pieces Salt and pepper, to taste
this was so delicious! I did not have bay leaves, so used tarragon leaves instead, and used chicken stock instead of vegetable stock. No carrots, so added in spinach with the broccoli. and used a mix of sharp cheddar and colby jack. So delicious! The nutmeg really set off the flavors.
Roasted Broccoli and Cheddar Soup/Great soup. I used vegetable stock and subbed the heavy cream with ff condensed milk. Sprinkled bacon on top. The grainy mustard took it up a notch. It's a keeper and I will make again.
