I used about half of the sour cream and instead of 2 cans of cream of broccoli I used I can cream of broccoli and one can of cream of chicken. The 7 year old and I liked it. The 4 year old and husband not so much. If you like this kind of food, I reccomend this dish. since only 50% of my household wouldn't eat it, I am doubtful we will try it again. Because I don't like Rosemary, which is in Italian Seasoning, we used a combination of thyme, tarragon, basil & oregano. So choose your own combination & use as much or little as you like! This is our favorite way to eat broccoli of all time! I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.

The Best Broccoli of Your Life. PRE-HEAT 425. 4 to 5 lbs. of broccoli cut into florets. (if washed dry throughly). Put broccoli on cookie sheet and toss with 5 tblsp olive oil, 1 1/2 tsp kosher salt, 1/2 tsp fresh ground pepper. toss in 4 garlic cloves - peeled and sliced. Roast in oven 20-25 minutes. Take it out of oven and zest and squeeze juice of a lemon over the broccoli, 1 1/2 tblsp more olive oil, 3 tblsp toasted pine nuts, 1/3 cup grated parmesan cheese, 2 tblsp cut basil.
The Best Broccoli of Your Life November 10, 2008 | By Adam Roberts | 152 Comments IMG_1.JPG You know you’ve done something right with broccoli when the person you made it for describes it to someone else the next day as “better than biting into a steak.” Those were Craig’s words and they were a marked change from the first words he uttered about the broccoli, before he bit in: “You made broccoli for dinner? Broccoli and sweet potatoes?” Then he did bite in and his eyes lit up. “Oh my God,” he said. “This is the best broccoli I’ve ever had in my life.” Later he said: “If parents made this broccoli for their kids, kids wouldn’t hate broccoli. They’d beg for it.” So what did I do to the broccoli to make it taste so good? I can’t take any credit. The credit goes to that formidable force in my foodie life; namely, The Barefoot Contessa. From the very beginning, when I used to go to book stores and copy recipes out of her books on little index cards that I kept in my pocket, Ina Garten’s recipes have proved to be that perfect combination of simple yet sophisticated; she maximizes flavors in ways that are both ingenious and incredibly replicable. Anyone can do an Ina recipe yet when you taste the finished product, it doesn’t taste that way; it tastes like it was made by a pro. I’m going to have a hard time this week not posting all of the recipes from her new book, Back To Basics. In the past few days alone, I’ve made her roasted pears with blue cheese and walnuts; her roasted sweet potato wedges (which I wrote about in the previous post); and from her “Parties!” book, her butternut squash soup and her roasted pork loin. As you can tell from these recipe titles, The Barefoot Contessa loves roasting. Specifically, she loves roasting vegetables at a high temperature until they caramelize. That’s the basic premise of most of her vegetable recipes in most of her cookbooks and that’s precisely what makes her broccoli recipe the best you’ve ever had. Normally, broccoli gets squishy when you cook it. Not this broccoli; it develops an amazing brown crust in spots. Then you toss it with lemon juice, lemon zest, and Parmesan cheese and you’re in heaven. Seriously, this recipe is so easy I can recite it without looking at the book. (Ok, I’m lying, I’m about to open the book just to double check….) You preheat the oven to 425. Take 4 to 5 pounds of broccoli (I just got two large bunches), cut into florets (but relatively big ones.) Here’s the key that she doesn’t mention in the recipe: dry them THOROUGHLY. That is, if you wash them. I saw an episode of Julia Child cooking with Jacques Pepin once when Pepin revealed he doesn’t wash a chicken before putting it in a hot oven: “The heat kills all the germs,” he said in his French accent. “If bacteria could survive that oven, it deserves to kill me.” By that logic, then, I didn’t wash my broccoli; I wanted it to get crispy and brown. If you’re nervous, though, just wash and dry it obsessively. Now, it’s easy. Put the broccoli on a cookie sheet. Toss with olive oil, salt and pepper. (She says 5 Tbs olive oil, 1 1/2 tsps kosher salt, 1/2 tsp fresh ground pepper, but I just eyeballed it.) Now add 4 garlic cloves that are peeled and sliced and toss them in too. IMG_2.JPG Roast in the oven 20 to 25 minutes, until “crisp-tender and the tips of some of the florets are browned.” I shook the pan around a bit as it went, but not sure that’s necessary. When it’s done, take it out of the oven–and here’s where it gets really good–zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts (I left those out), and 1/3 cup of freshly grated Parmesan cheese. She also has you add 2 Tbs julienned fresh basil, but I left that out too. IMG_3.JPG You won’t miss it: the magic combo of the crispy broccoli, the garlic, the lemon and the cheese will make this the best broccoli of your life. I guarantee it; you will go ga-ga over it. I’m so ga-ga over it that I would seriously consider a trip right now to the store just so I could make this for lunch. Broccoli for lunch? After trying this, you’ll never want to eat anything else for breakfast, lunch or dinner ever again.

Cover the mixture and place in the fridge overnight. Slice 1/4 off of the large yellow onion at the stem end. Remove the outer skin layer of the onion. Now place the onion on a cutting board with the 1/4 slice from the stem end that you removed with the cut side down. Place your thumb at the top root of the onion. slice down from where your thumb is at the top. Spin the onion around and do the same thing on the opposite end. Do this again until you have 4 petals, and then 8. Now do the same procedure but make 2 slices between each of the 8 petals giving you a total of 24. Turn the oven over to see your onion “bloom” Open the can of tomato paste and empty. This will be your coring tool for the onion. Mix the breading ingredients noted above using a large bowl. Add the panko bread crumbs separately. Using a medium size bowl mix the milk and the eggs and beat. Dunk the onion and coat it completely in the breading mixture. Be sure that you get the breading down in between each petal of the bloom. Lower the onion in the milk and egg beaten mixture. Remove the onion and allow the excess milk and egg mixture to drip off. Add the onion back into the breading mixture and recoat. Dip the onion back into the milk and egg mixture and add to the bowl of panko and coat with breadcrumbs. Preheat the oven to 375 degrees. Spray a baking sheet with olive oil cooking spray and place the bloomin onion on to the sheet. Bake 45 minutes until it is crispy and browned. Remove the onion from the oven. Core the onion with the tomato paste can. Pour the blooming onion dipping sauce into a small container. Enjoy

Spinach Bean Burrito Wrap: Ingredients 6 cups baby spinach, loosely packed 1 (15 ounce) can black beans, rinsed and drained 1-1/2 cups cooked brown rice or Mexican Rice, (recipe for Mexican Rice recipe) 1/2 cups chopped romaine heart lettuce 1/2 cup grated cheddar cheese, reduced-fat 1/2 cup salsa (recipe), optional Pico de Gallo 6 tablespoons Greek yogurt, fat-free Kosher or sea salt to taste 6 (8" whole grain) wraps or tortillas Directions To warm tortillas, preheat oven to 300 degrees. Stack tortillas, wrap in foil, place on a cookie sheet and warm 15 minutes while preparing ingredients. Place spinach in a food processor and pulse until finely chopped, or use a knife to dice leaves. In a large skillet turn to medium-heat, add black beans and spinach. Heat until spinach is wilted, approximately 3 minutes. Evenly distribute spinach and bean mixture in the middle of the wraps (leaving about 2" on one end for folding), add 1/4 cup rice to each wrap, add lettuce, cheese, salsa and Greek yogurt evenly over wraps. Fold wraps over and under on the ends. Assemble and cool to room temperature before wrapping them airtight and placing them in the freezer. They should last about 4 months this way and can be heated straight from frozen in the oven or microwave. Do not thaw before cooking or they will be soggy. I would not freeze them with the Greek yogurt or the lettuce now that you mention it. The cheese and the salsa, however, can be added before freezing or after. Those should freeze okay. Thanks. CHICKEN AND SPINACH PASTA BAKE (SHARE to save for later) ???SHARE so you can find it on your timeline??? I got this recipe from a Kraft Magazine years ago. It was the first time I ever ate spinach and realized I couldn't taste it.. A must bake!! ? 8 oz uncooked rigatoni (use Dreamfields for low carb!!) ? 1 T olive oil ? 1 c chopped onion ? 1 (10 oz) pack frozen spinach, thawed ? 3 c cubed, cooked chicken breasts ? 1 (14 oz) can Italian-style diced tomatoes, un-drained ? 1 (8 oz) container Philadelphia chive & onion cream cheese ? ½ t salt, ½ t pepper ? 1½ c shredded mozzarella cheese Prepare rigatoni according to pkg directions. Spread oil on bottom of 11×7 in baking dish; add onion in a single layer. Bake at 375 for 15 minutes or just until tender. Transfer onion to large bowl, set aside. Drain chopped spinach well, pressing between paper towels. Stir in rigatoni, spinach, chicken, & next 4 ingredients into onion in bowl. Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese. This is THE meat that you want to stuff in your tacos, burritos and salads. Outstanding! My Kitchen Escapades: Pork Carnitas The end result however is out of this world. The meat is completely melt-in-your-mouth, while the caramelization on the outside multiplies that amazing flavors. We have a hard time not eating it all before we get the chance to stick some in a tortilla :) Pork Carnitas (recipe adapted from Cooks Illustrated) 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt 3/4 tsp pepper 1 tsp ground cumin 1 onion, peeled and halved 2 bay leaves 1 tsp dried oregano 2 Tb fresh lime juice 2 C water 1 medium orange, juiced and keep the spent halves 1. Adjust oven rack to lower middle position and heat to 300 degrees. Combine all the ingredients in a large Dutch oven, including the spent orange halves and juice. Bring the mixture to a simmer over medium-high heat, uncovered. Once it simmers, cover pot and transfer it to the oven. Cook until the meat falls apart when prodded with a fork, about 2 hours. 2. Remove the pot from the oven and turn on the broiler. Use a slotted spoon to remove the meat from the pan and place it on a large foil-lined jelly roll pan. Remove and discard everything from the pot except for the cooking liquid. Place pot over high heat on the stove and boil until thick and syrupy, about 20 minutes. You should have about 1 C of liquid remaining when it is finished. 3. While the liquid is reducing, use two forks to pull each cube of pork into three equal sized pieces. Once the liquid has become a syrup, gently fold in the pieces of pork into the pot. Try not to break up the pork any further. Taste and add additional salt and pepper. 4. Spread the pork back onto the foil lined pan and evenly spread the meat around so there is a single layer of meat. Place the jelly roll pan on the lower middle rack of the oven and broil until the top of the meat is well browned and edges are slightly crisp, about 5 to 8 minutes. Using a wide metal spatula, flip the pieces of meat and broil the other side until well browned and edges are slightly crisp, 5 to 8 minutes. Serve immediately in a tortilla with all your favorite toppings.
