1 (14.5 ounce) can Tomatoes, stewed

Canned Goods

1 (14 ounce) can Coconut milk, light or regular


1 (8 ounce) can Tomato sauce

Pasta & Grains

1 Jasmine rice or brown rice, Hot cooked

Baking & Spices

2 tbsp Curry powder
1 1/2 tsp Paprika
1/2 tsp Pepper
1 tsp Salt
3 tbsp Sugar

Oils & Vinegars

1 1/2 tbsp Vegetable or canola oil

    Coconut Chicken Curry Would eliminate or halve potatoes next time. Put in crock pot for 4 hrs instead of simmering. Very easy recipe, but didn't taste like authentic Thai curry, but rather more like a stew.

Coconut Lime Chicken with Chiles With A Twist Of Curry Over Rice

CURRIED CHICKEN WITH COCONUT RICE~ 1 whole chicken cut into 10 pieces, 4 tsp sweet curry powder, ½ tsp cayenne pepper, ½ tsp kosher salt, 2 tbsp olive oil, 3 cloves garlic minced, 3 tbsp fresh ginger minced, 1 yellow onion diced, 2 tbsp tomato paste, 2 cups basmati rice, 1 can unsweetened lite coconut milk, fresh cilantro.

Chicken-Coconut Curry - Both kids and adults will love the limey-coconut flavor in this dish, which falls somewhere between tangy and sweet. If your family like spicy curry, add thinly sliced serrano chiles. Serve the curry over rice with bowls of lime wedges, bean sprouts and sprigs of fresh cilantro.
