    Sweet Potato Muffin recipe from Mark Bittman (love him!) My adjustments: instead of 2-1/2 cups whole wheat flour, use 1 cup whole wheat flour, 1 cup oat flour, and 1/2 cup almond flour. Substitute 1/4 cup coconut oil for vegetable oil (this is a particularly awesome tweak). Use 1/2 cup white sugar and 1/4 cup brown sugar. Can use yogurt instead of buttermilk. Also tried this recipe with 2 cups of cooked carrots and/or sweet potatoes (instead of one) and they turned out great!]
