Oven-Roasted Asparagus and Mushrooms... 1 bunch Asparagus 1/2 package White Mushrooms Olive Oil Salt, Pepper, and Garlic Powder... Wash and chop asparagus into 1" pieces. Slice mushrooms. Add both vegetables to a baking dish. Lightly coat with olive oil, mixing to ensure that everything is evenly coated. Sprinkle with salt, pepper, and garlic powder. Roast at 400F for approximately 30 minutes, to desired tenderness.

Shake N Bake broccoli. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for minutes.

Balsamic Roasted Brussels Sprouts  375 oven... cut sprouts in half... olive oil, salt and pepper and about 2T balsamic vinegar.  Cut side down on baking sheet - 15 min in oven, flip and 15 min more.

Roasted Okra, this was fantastic!!!!! I roasted it for close to 30 minutes, since I used frozen okra, stirred it half way through and then sprinkled with more salt before serving, seriously could eat this like popcorn! My husband loved it too, and he doesn't like okra.
