This butternut squash and cranberry gratin is creamy, cheesy and perfectly crunchy on top. You’d never guess it’s dairy free!
Butternut Squash Purée According to recipe it's supposed to make 1-2 cups. Mine made more like 4 cups so I had to adjust spices. Also, hard to get the blender to blend it (and I have a Ninja) First I added a couple more tablespoons of butter and then I kept adding small bits of water until I was happy with it. Good flavor. Can't wait to use it!
