blueberry + chocolate cupcakes: blueberries, chocolate, ganache, and a sprinkling of unicorn dust, I'm sure. I made these years ago for a friend's birthday. They looked lovely, and they're so... fresh looking even though it's chocolate, which doesn't exactly scream fresh to me.
I'd use something other than soy milk... Acually, you don't really even need milk if you have a nice food processor. :) You can make so many things with avocados! Flavor it with lemons, chocolate, peanut butter, bananas, other types of fruit, whatever! :) If you freeze it and process it, you can then flavor it and it will be like ice cream, which you can also do with bananas. :)
Maintenance: Coconut Milk Chia Seed Pudding Pots with Raspberry Rosewater Sauce - sounds swanky but it's super-simple. Make this with all coconut milk and sweeten with xylitol or stevia, and you can even have this for breakfast.
