8 STARS!! Quick and Easy Tortellini Soup. My (adult) son wasn't sure he would like it - it turned out to be his favorite dish of the week and it was indeed quick & easy to make. Everyone said they would eat it again. I made it a vegetarian dish: used vegetable broth, cheese tortellini and swiss chard from my garden. I served it with garlic bread & a cucumber & tomato salad.
