Made this coconut pie filling. Calls for 6 cups milk and tsp. coconut extract. Instead I used one can of coconut milk and omitted enough milk to equal 6 cups. YUM! I used Pillsbury pie crust. I pinned and used a different, easier recipe for the meringue.
As is, this recipe makes a wonderfully rich meringue-topped pie. You can, however, quickly convert this recipe into one for a great chocolate coconut cream pie if you also use unsweetened coconut powder for the custard.
