For me, the best part of these potato skins on the Char-Broil Big Easy isn’t so much the toppings, though let’s face it, I do love bacon and cheese and sour cream and jalapenos. No, it’s actually the crispy potato skins. Brushing them with melted butter mixed with smokey chipotle powder really sets these skins apart from the usual. It’s not all about the toppings. I cannot stop using the cooking rack for my Char-Broil Big Easy. Not only does it give me up to 6 levels of cooking, I figured out I can add 9″ pie pans and cook things I could never cook before. Like nachos. Crunchy nachos, with melted cheese. With all of your favorite toppings. You’ll be really happy with how great the chips crisp up in your Big Easy. They’re perfect!

Oh yes, I’ve made bacon-wrapped tater tots on the Char-Broil Big Easy. Several times. And I love them. Lots. But, if you follow this blog, you know I like some kick to my tots. Hence these bacon jalapeno tots. Same concept, but with some heat. Not a whole lot, but enough to be noticed. Served with a great creamy cheese sauce that also has a bit of a kick to it.

I really should’ve listened to my inner voice. You know the one. The one that says “You should make a double batch of these bacon-wrapped shrimp”. But I didn’t listen. I fired up my Char-Broil Big Easy and made just one batch. One little ole batch. I knew as soon as the bacon started cooking that I was in a for a treat. In almost no time I was enjoying hot, tender, moist shrimp wrapped in tasty bacon, seasoned with my favorite Fire-Eater rub, dipped in a cool remoulade sauce.
