    Roasted Smashed Potatoes - Absolutely love these. Pointers - boil in at least 2 T of salt in the water. Won't need to salt the potato much if any. While still hot, smash each one with a coffee cup. Use a cookie sheet with a lip. Oil well. Lay the potato on the cookie sheet and then flip over. Flip them over again half way thru roasting. Reminds me of potato skins . . . even better and much easier. Use as them as a base for just about anything on top.
