Smothered Pork Chops - I made a few changes to make this a perfect dish. Use beef broth instead of chicken. Use medallions from a pork tenderloin instead of chops. Add red or white wine after sauteeing the onions & mushrooms and let reduce by half.
Excellent take on New Mexican Chile Verde. It's similar to the NM grannie recipe I have, but there are subtle differences. One- marinate the meat for an hour beforehand and roast the onions and garlic instead of fry them. It made for a deep and rich stew. -Amber
