    LEEK FRITTERS: 4 lg leeks, 1/2c almond flour, 2 eggs, 1/2T minced garlic, S&P Chop the leeks coarsely, rinse. Place leeks in boiling water, cook for 5 min till tender. Drain, cool. Mix with other ingred. Form small patties, fry in a large skillet, heat olive oil and pan fry until golden (usually 2-3 minutes on each side).

Paleo Alfredo with Caramelized Leeks & Bacon -- Gluten free. This uses white sweet potato 'noodles' for something hefty and different, though you can substitute. (Sweet potatoes are still a little carby for me, but my husband loves them.) A bit of work, but a delicious cool-weather weekend meal.

#paleo Banana Nut Mini Muffins: 1/2 cup coconut flour; 6 eggs; 1/3 cup honey; 1/3 cup grapeseed oil; 2/3 cup crushed walnuts (optional); 2 bananas; 1 tablespoon vanilla extract
