Ingredients 15 (12oz) whole-wheat lasagna noodles uncooked 1 15 oz container fat free ricotta 3 cups shredded reduced fat mozzarella 1 28-ounce can crushed tomatoes 1 28-ounce can diced tomatoes 1 5-ounce package baby spinach, coarsely chopped 3 large portobello mushroom caps thinly sliced 1 small eggplant, quartered lengthwise and thinly sliced 1/2 cup liquid egg substitute 5 cloves garlic, minced 1/4 cup fresh basil, finely chopped 1 tsp dried oregano 1/2 tsp salt 1/2 tsp pepper Instructions In a large bowl, combine egg substitute, ricotta, salt, pepper, oregano, spinach, mushrooms and eggplant. Mix both kinds of tomatoes and their juice, basil and garlic, in a medium bowl. Coat a 6-quart or larger slow cooker with non-fat cooking spray. Put the lid on the slow cooker and cook on High for 2 hours or on Low for 4 hours. Turn off the slow cooker, sprinkle the reserved mozzarella on the lasagna, cover and let stand for 10 minutes to melt the cheese. Strawberry Shortcake Trifle 1 angel food cake ( store bought less than one pound), cubed or torn 1 package sugar-free strawberry jello 2 c. boiling water 16 oz. package frozen strawberries 2 packages sugar-free vanilla instant pudding 3 c. skim milk 8 oz. Cool Whip Free fresh strawberries Dissolve jello in boiling water. Remove from heat and stir in frozen berries. Refrigerate 15-20 minutes or until partially gelled. Meanwhile, whisk together the pudding with the milk until thickened. Fold in Cool Whip. Place ⅓ of the cake pieces in the bottom of a trifle dish, top with ⅓ of the jello mixture, top that with ⅓ of the pudding mixture. Repeat two more times. Garnish the top with fresh, sliced strawberries.

Preheat oven to 350 degrees F. Lightly grease a 2-quart rectangular baking dish; set aside. In a very large bowl, combine soup, cheese, milk, sour cream, onion, and pepper. Stir in potatoes. Spread mixture evenly in prepared baking dish. 2. Cover and bake for 45 minutes; stir potatoes. Sprinkle with cornflakes.
