Healthier egg sandwich for busy mornings: Lightly grease muffin tins + crack one egg in each well (break yoke for it to cook fully). Stick these in a 350 degree oven for about 15-20 minutes. Assemble: whole wheat English muffins + egg + cheese + spinach/tomatoes or other veggies, wrap and freeze!
